Pancakes on Fat Tuesday

I followed Mystie’s advice and got a griddle that covers two burners on the stove.  I already made a mess of grilled ham & cheese sandwiches for lunch yesterday.  Today I’ll be flipping pancakes.

First lightWe’ll be having our favorite pumpkin pancakes from Sunset Magazine and oatmeal pancakes from Laurel’s Kitchen.  Here’s the simple recipe:

  1. Mix together a cup of oats and a cup of milk.  Let stand 10 minutes.
  2. Then mix in 2 T oil and 2 eggs.
  3. Sift a half cup of whole wheat flour with 1 t baking powder, a quarter t salt, and 2 T brown sugar.
  4. Stir the dry ingredients into the wet and fry on the above mentioned really big griddle.

We’ll enjoy these sweeties with homemade syrup, eggs + sausage.
