Pancakes on Fat Tuesday
I followed Mystie’s advice and got a griddle that covers two burners on the stove. I already made a mess of grilled ham & cheese sandwiches for lunch yesterday. Today I’ll be flipping pancakes.
We’ll be having our favorite pumpkin pancakes from Sunset Magazine and oatmeal pancakes from Laurel’s Kitchen. Here’s the simple recipe:
- Mix together a cup of oats and a cup of milk. Let stand 10 minutes.
- Then mix in 2 T oil and 2 eggs.
- Sift a half cup of whole wheat flour with 1 t baking powder, a quarter t salt, and 2 T brown sugar.
- Stir the dry ingredients into the wet and fry on the above mentioned really big griddle.
We’ll enjoy these sweeties with homemade syrup, eggs + sausage.
Oh yum! Sounds delicious…mema called the syrup-sugar syrup. Remember? Have a happy day.
